Varanasi, alternatively referred to as Banaras, epitomises the essence of Indian tradition and culture. 1. Launglata
This sweet is coated in sugar syrup and has a crunchy and crusty exterior; it is created using all-purpose flour. The dessert is filled with khoya (mawa) and mewa (dried fruits). First, the dough is flattened out and formed into flatbread. It is then stuffed with the fillings, which are placed in the centre. The dough is then folded over and over until the filling is completely encased. One or two cloves are pinned at the top to keep the pastry folds together and to provide a unique sweet flavour not just to the sweet but also to the ghee in which it is fried. Then they are deep-fried in oil or ghee till golden brown and crunchy. Finally, it is dipped in sugar syrup to rest and absorb the syrup before serving.
2. Malaiyyo
Another famous sweet from Banaras is Malaiyyo. You can only get it in the winter because it’s seasonal. The milk is cooked and then left outside to soak up the dew’s sweetness throughout the night. In the morning, the milk is flavoured with cardamom, pistachio, cream, and saffron. Next, the mixture is churned until the froth separates from the rest of the ingredients. Malaiyyo is the name of this foam. It used to take hours of labour to physically churn the ingredients. Even though machines have made it easier, the technique is still very important. The frothing process is only possible in low temperature; hence Malaiyyo is made only in winters. You could be surprised when you get a dish of Malaiyyo since it resembles clouds in a cup. Because it is airy and fluffy, you can gobble several cups in one sitting.
3. Parval Mithai
Have you heard of vegetable sweet? That’s right. Among the several vegetable sweets found in Banaras, the Pointed Gourd parwal ki mithai is by far the most beloved. It is well-known that UP, Bengal, and Bihar use parwal as a vegetable staple. This is why these states have an extensive menu of parwal meals. The three states all agree, nonetheless, that parwal ki mithai is the best. You would never guess that this is a parwal mithai—stuffed with khoya and dry fruits—dipped in sugar syrup—unless someone told you so.
